Good stuff right here people 1 10 oz can enchilada sauce 1/2 cup Salsa 4 cups chopped chicken 1/2 cup sour cream 1/2 cup green onions 2 Tbsp taco seasoning mix 8 (6 inch) tortillas cut in half 2 cups Shredded Monterey Jack Cheese .. I used the one with Jalapenos in it 2 cups tortilla chips 1 cup tomato's chopped 2 Tbsp Sliced ripe olives Cilantro for garnish
Heat oven to 375 spray the bottom of 13x9 3 quart glass baking dish .. or use oil In a small bowl combine enchilada sauce and salsa ... put about a 1/4 cup of this sauce in the bottom of the baking dish With the remainder of the sauce add sour cream , chicken , 1/4 cup of the green onions and the taco seasoning .. mix well
Arrange 8 tortilla pieces over the bottom of the baking dish ... Add 1/2 the chicken mixture on top ... add 1/3 the cheese ... repeat
Bake 30 to 35 mins or until hot .. Layer tortilla Chips tomato olives and green onions and remaining cheese over the top .. bake an additional 5 mins let stand 10 mins before serving Garnish with Cilantro
