This is my own concoction of a lot of different recipes
6 bell peppers .. I use both red and green .. I like the red better
about 2 lbs ground beef
1/4 cup bread crumbs
1/4 cup rice (not instant)
2 eggs
one small onion minced
the tops of the bells Minced
2 cloves garlic minced
1 tsp italian seasoning
1 tsp Worsteshire sauce
a couple dashes of cayenne pepper
salt and pepper
I use beef bullion instead of salt
This time I also mixed in about 1/3 cup of Parmesan / Romano Cheese
Mozzarella cheese for the top
Mix all ingredients together if its a little too dry add a bit of water till it is a good consistancy .. I put this in the fridge over night and adjust it the next day ..
stuff into your bells ..
Cover tight with aluminum foil and bake in a preheated 350 degree oven for an hour .. remove aluminum foil and add the cheese to the top of each of the peppers .. put back in the oven Uncovered until the cheese is melted and bubbly .. Serve with sauce below or your own hope you enjoy
Sauce .. Keep in mind this is just for 2 servings
One small can (or a small jar if ya have it )
I chop one small tomato into the sauce
if you add the tomato let it cook down for about an hour or so
about a 1/4 tsp more or less depending on your taste
1/4 tsp garlic powder
1/4 tsp onion Powder
a dash or 2 of cayenne
adjust to your liking .. some people just use ketchup or a marinara sauce ..
These freeze Very well .. I stuff them Don't Bake them First double wrap them and freeze away .. this saves me tons of time in the kitchen when I don't feel like cooking ..
when I want them... I take pop them in the microwave and SLOWLY defrost make sure they are totally defrosted and bake as above
