1 cup oil(or half butter, half oil) 3 eggs 2 cups sugar(you can do half brown, half white) 1 tsp vanilla 3 cups diced apples(I used 3 med. red delicious apples and came out really close ) 3 cups all purpose flour(I used self rising and left out the baking soda) 1 tsp cinnamon(I did 2) 1 tsp salt 1 cup chopped nuts(optional) I used walnut extract instead- I didn't have any nuts
Combine oil, eggs, sugar and vanilla- set aside. In a different bowl add flour, cinnamon, baking soda, and salt. Slowly add to oil mixture. Once combined well mix in apples and nuts. Bake for 1 1/2 hours at 300. Sprinkle with sugar if desired.

I love apple bread!! I've got a recipe for zucchini bread that you substitute the apples for...Will have to post that soon!
