Three Seed Spread Make this simple seed spread as a filling for sandwiches or as a topping for toast. You could also serve it as a starter with salad. -------------------------------------------------------------------------------- Ingredients 2oz/50g pumpkin seeds 2oz/50g sunflower seeds 2oz/50g sesame seeds 1 spring onion, chopped 2 sticks celery, diced 1 carrot, grated 2-3tbsp chopped fresh parsley 1tbsp tomato ketchup 2tsp shoyu salt and pepper Method 1. Grind the pumpkin, sunflower and sesame seeds finely in a food processor or nut mill. 2. Add the onion, celery, carrot, parsley, ketchup and shoyu and blend again until the mixture holds together. Season to taste. 3. Use the Three Seed Spread: - as a sandwich filling - add lots of crunchy salad - or serve as a first course accompanied by a side salad with either a creamy yoghurt and cucumber or tofu and lemon dressing.
